Authentic Layered Enchilada Recipe

Recipe Serves: 6
Ingredients for Layer Enchilada Recipe
1 lb Ground beef
1 cn (4.5-oz) ripe olives; chopped
1/4 ts Pepper
1 Clove garlic; chopped
8 -(up to) 12 Corn tortillas
1 md Onion; chopped
1 cn (8-oz) tomato sauce
1 ts Salt
1 tb Chili powder
1/2 lb Cheese; grated
2/3 c Water
Layer Enchilada Preparation
Sauce ground beef, onion & garlic. Add tomato sauce, olives, salt, pepper & chili powder.
Place tortillas, sauce & cheese, alternately, in a casserole dish, ending with cheese. Pour water over cheese.
Bake at 400F for 30 minutes. Serves 6.

Sounds great! I just came back from mexico last week and find myself addicted to these incredible enchilada recipes now!! Must go back next year sometime, I suppose, and this time head off of the beaten path a little. Looking to reading more!

Hi there, long time lurker here with my first ever comment! My only daughter is getting married to her lovely mexican gentleman soon, and I’m tasked with preparing the wedding party! I thought enchiladas would be a nice finger food, so trying to find some good enchilada recipes. What do you think? Any other suggestions?? Anyway, thanks for your hard work as ever…
