Basically to butterfly the leg you just make one slice into it, and around the bone. Once you remove the bone, you should be able to lay it down flat for grilling. Alternatively, if you buy a leg of lamb boned and rolled, you can just untie the string around the lamb and it will roll out flat that way as well. Hope this helps, Mick.
