<p>3 c Self-raising flour<br />
1 tb Sugar; optional<br />
1 can <a target="_blank" title="Aussie beer" href="http://www.australianbeers.com/" target="_blank">Beer</a>; at room temperature<br />
1 Egg; beat w/ 1 Tb water</p>
<h2>Beer Bread Preparation</h2>
<p>Combine flour and sugar, pour in <strong>beer</strong> and stir just until dry ingredients are moist.</p>
<p>Pour batter into greased and floured loaf pan and let sit for about 15 min. to rise.</p>
<p>Dough will be very gooey. Brush top with egg mixture and bake in pre-heated 375 F oven for about an hour or until pick comes out clean.</p>
<p>When done, brush top with butter. I like to add things like 2 cups shredded cheddar cheese and 2 tblsp. caraway seeds, or the cheese and some fresh chopped jalapenos or just use your imagination.</p>
<p>If you add these things, add them to the flour and mix well before you add the beer.</p>

<p>1 kangaroo tail<br />
2 oz of butter<br />
1 tablespoonful of flour<br />
1 tablespoonful of curry-powder<br />
2 onions, sliced<br />
1 sour apple cut into dice<br />
1 dessert-spoonful of lemon juice<br />
3/4 of a pint of stock<br />
salt</p>
<h2>Method For Cooking  Curried Kangaroo Tail Recipe</h2>
<p>Wash, blanch and dry the tail thoroughly, and divide it at the joints.</p>
<p>Fry the tail lightly in hot butter, take it up, put in the sliced onions, and fry them for a few minutes without browning.</p>
<p>Sprinkle in the flour and curry-powder, and cook gently for at least bring to the boil, stirring meanwhile, and replace the tail in the stew pan.</p>
<p>Cover closely, and cook gently until tender, then add the lemon-juice and more seasoning if necessary.</p>
<p>Arrange the pieces of tail on a hot dish, strain the sauce over, and serve with boiled rice.</p>
<p>Time: from 2 to 3 hours.</p>

<p>Combine all ingredients in saucepan. Simmer over low heat for about 30 minutes, stirring occasionally.</p>

<p>4 lb Boneless, cubed venison<br />
3 tb Bacon grease<br />
5 tb Fresh ground cumin<br />
5 Garlic cloves minced<br />
1 1/2 Cans of beer<br />
1/2 ts Cayenne pepper<br />
6 Jalapenos fresh and whole<br />
1/2 ts Salt<br />
2 Jalapenos seeded and chopped<br />
3 tb Soy sauce<br />
1/2 c Chopped green capsicum<br />
2 Onions chopped<br />
8 oz Can tomato sauce<br />
2 c Stewed tomatoes<br />
2 tb Masa harina<br />
1 oz Jack Daniels whiskey</p>
<h2><strong>Venison Chilli Preparation (Serves 6)<br />
</strong></h2>
<p>Brown venison in bacon grease. Saute the onions, the chopped jalapenos, and the capsicums in the bacon grease until the onions start to become transparent.</p>
<p>Meanwhile bring the beer and whiskey to a boil and add the venison, seasonings, except for 1 Tb of cumin, and the onions/capsicums to the pot.</p>
<p>Allow to boil for 5-7 minutes. Reduce the heat to medium then add the tomatoes and tomato sauce.</p>
<p>Stir the venison chilli occasionally while continuing to cook for 30 minutes.  Reduce heat to simmer and cook for 1 hour.</p>
