<p>2 ts Reduced-calorie margarine, divided<br />
1 c Chopped onion<br />
1/2 c Coarsely chopped red bell pepper<br />
1/2 c Coarsely chopped green bell pepper<br />
1/3 c Diced ham<br />
4 Egg whites<br />
2 Eggs<br />
1/4 ts Salt</p>
<h2><strong>Denver Omelettes Preparation</strong></h2>
<p>Melt 1 teaspoon of reduced-calorie margarine in a medium nonstick skillet over medium-high heat. Add the onion and bell peppers; saute for 7 minutes or until tender.</p>
<p>Add diced ham, and saute 1 minute. Remove from heat; set onion mixture aside.</p>
<p>Combine the egg whites, eggs, and salt in a medium bowl; stir well with a wire whisk. Melt 1/2 teaspoon margarine in a small nonstick skillet over medium heat.</p>
<p>Add 1/2 cup of onion mixture, spreading over bottom of skillet. Pour half of egg mixture into skillet, and top with 1/2 cup onion mixture (do not stir).</p>
<p>Cover, reduce heat to medium-low, and cook for 10 minutes or until the center is set.</p>
<p>Loosen the Denver omelette with a spatula, and fold in half. Slide your Denver omelette onto an individual plate; set aside, and keep warm.</p>
<p>Repeat the procedure with remaining 1/2 teaspoon margarine, onion mixture, and egg mixture.</p>
<p>Yield: 2 servings (serving size: 1 Denver omelette). Per serving: 187 Calories; 8g Fat (36% calories from fat); 18g Protein; 11g Carbohydrate; 192mg Cholesterol; 813mg Sodium</p>

<p>4 Potatoes; peeled or unpeeled<br />
1 Green capsicum; chopped<br />
1 Onion; cut into cubes; (separate the pieces.)<br />
4 Clove Garlic; sliced<br />
1 c Water<br />
2 c Thawed frozen or fresh corn<br />
1 lg Tomato; diced</p>
<h3>Hash-Brown Medley Preparation</h3>
<p>Place the potatoes, green capsicum, onion, and garlic in a non-stick frying pan with 1/2 cup of the water.</p>
<p>Cook, stirring, over medium heat for 5 minutes. Add the remaining 1/2 cup water.</p>
<p>Cover and continue to cook for another 10 minutes, stirring occasionally. Add the corn and tomato. Cook, stirring, for an additional 5 minutes.</p>
<p>Contains 184 calories, 0.9 per serving.</p>

<p>6 sl Bacon<br />
1 pk (12 oz.) frozen hash browns<br />
6 Eggs; beaten<br />
1/4 c Milk<br />
1/2 ts Salt<br />
1 ds Pepper<br />
1 c Cheddar cheese<br />
Picante sauce; (opt.)</p>
<h3>Hash Brown Skillet Breakfast Preparation</h3>
<p>Cook bacon crisp; drain well. Save drippings.</p>
<p>Crumble bacon and set aside.</p>
<p>Cook hash browns in drippings until underside is crisp and browned.</p>
<p>Combine eggs, milk, salt and pepper. Stir well and pour over potatoes.</p>
<p>Top with cheese and sprinkle with bacon.</p>
<p>Cover and cook over low heat for about 20 minutes. Cut into wedges and serve.</p>
<p>Top with picante sauce.</p>
