Ingredients for Hawaiian Beef Jerky Recipe

1 lb Lean beef, thinly sliced
1 ts Salt
1 ts Ground ginger
1 tb Brown sugar
1/4 ts Pepper
1/8 ts Cayenne pepper
1 Crushed garlic clove
1/4 c Pineapple juice
1/4 c Soy sauce

Hawaiian Beef Jerky Preparation

In a small glass bowl, combine all ingredients except beef. Stir to mix well.

Place meat 3-4 layers deep in a container, spooning sauce mixture over each layer.

Cover tightly and marinate 6-12 hours in the fridge, stirring occasionally and keeping the mixture covered.

Layout on trays, 24 to 36 hours in dehydrator.

I used a couple of cans of pineapple chunks with the juice in the marinated. I just dehydrated them with the beef, it turned out to be much more interesting with the extra pineapple flavour added to the Hawaiian beef jerky.

Free Recipe Hawaiian Simmered Pork

Recipe Preparation: simmer

Recipe Serves: 6

Ingredients for Hawaiian Simmered Pork Recipe

4 lb Boneless pork loin or butt
3/4 c White vinegar
1/2 c Soy sauce
1/2 c Brown sugar, firmly packed
1/2 ts Ground ginger (I like to use fresh ginger)

Hawaiian Simmered Pork Preparation

Place pork loin or butt in a 5-quart kettle.

In a bowl, mix together vinegar, soy sauce, brown sugar and ginger.

Pour over pork, cover and simmer approximately 3 hours or until pork is tender when pierced with a fork.

This is one of my old tried and true recipes. The original recipe card is so faded that I can hardly read it!

I like to serve this with hot rice.
