<p>2 lg Clusters veal sweetbreads<br />
2 Bay leaves<br />
1/4 c Fresh peas<br />
4 10-12 oz. center-cut white veal chops<br />
4 tb Margarine; clarified<br />
Flour<br />
Salt and pepper<br />
2 tb Chopped shallots or red onion<br />
1/4 c Sliced mushrooms<br />
1/4 c Marsala wine<br />
1/4 c Chicken consomme<br />
1/4 c Cream<br />
3 tb Butter</p>
<h2>Costolette Di Vitello Preparation</h2>
<p>1. Preheat oven to 425F.</p>
<p>2. Poach the sweetbreads with the bay leaves in salted water for 3 to 5 minutes, or until barely pink in the center. Remove and cut into 1/2 in. slices. Set aside.</p>
<p>3. Cook the peas in a small amount of boiling water until still slightly firm in the center, about 2 minutes. Set aside.</p>
<p>4. Pound the veal chops to a uniform 1/2 in. thickness. Heat the clarified margarine in a large saute pan over medium-high heat. Dust the chops in flour; shake off excess. Salt and pepper the chops and brown in the margarine on both sides. Place on a baking pan and start baking in preheated oven for 5 to 6 minutes. Discard the margarine from the saute pan; return the chops to the pan.</p>
<p>5. Add the shallots, sweetbreads, mushrooms, and peas. Cook over high heat for 2 to 3 minutes. Deglaze the pan with the Marsala; add the chicken and cream.</p>
<p>6. Remove the chops to a warm platter. Add the butter to the pan and cook until the juices are slightly thickened. Correct the seasoning with salt and pepper.</p>
<p>Pour the sauce over the veal chops, garnish with parsley, and serve at once.</p>

<p>4 Cube steaks &#8211; lean<br />
1-1/2 ts Olive oil<br />
2 Garlic cloves &#8211; crushed<br />
2 sm Zucchini &#8211; thinly sliced<br />
1/2 ts Basil &#8211; dried<br />
6 Cherry tomatoes &#8211; halved<br />
1/4 ts Pepper<br />
1-1/2 ts Parmesean cheese &#8211; grated</p>
<h3><strong>Italian Beef and Zucchini Dinner Preparation</strong></h3>
<p>Preparation time: 20 minutes.</p>
<p>Combine garlic, basil and pepper; divide mixture in half.</p>
<p>Press half of seasoning mixture evenly into both sices of beef steaks; reserve.</p>
<p>Heat oil and remaining seasoning mixture in large nonstick skillet over medium heat. Add zucchini; cook an stir 3 minutes.</p>
<p>Add tomatoes; cook and stir 1 minute.</p>
<p>Remove vegetables to a platter; sprinkle with cheese and keep warm. Increase heat to medium high.</p>
<p>Place 2 steaks in same skillet; cook 3 to 4 minutes, turning once. Repeat with remaining 2 steaks.</p>
<p>Season steaks with salt if desired.</p>
<p>Serve with warm vegetables.</p>

1 tb Olive Oil<br />

3 tb Dry White Wine<br />
Clove Garlic; Crushed<br />
12 oz Plum Tomatoes; Skinned &amp; Chopped<br />
Grated Zest Of 1 Orange<br />
2 ts Sun-Dried Tomatoes; Crushed<br />
1 ts Sugar<br />
2 tb Fresh Parsley; Finely Chopped<br />
Grated Zest Of 1/2 Lemon</p>
<h3><strong>Italian Lamb Waitrose Preparation</strong></h3>
<p>1. In a large frying pan, seal the lamb steaks in 2 tablespoons of the oil. Remove and season.</p>
<p>2. Add the remaining oil to the pan and gently fry the onion until softened.</p>
<p>3. Stir in the wine and boil for 2 minutes.</p>
<p>4. Add half the garlic, the plum tomatoes, orange zest and seasoning. Simmer for 5 minutes until the sauce thickens.</p>
<p>5. Stir in the sun-dried tomatoes and sugar. Return the steaks to the pan and, turning occasionally, simmer for about 10 minutes or until the lamb is cooked right through.</p>
<p>6. Meanwhile, mix together the parsley, lemon zest and remaining garlic.</p>
<p>7. Serve the steaks topped with the sauce and sprinkled with the parsley mixture.</p>
