<h2><strong>Ingredients for Pork Stew in Red Chile Sauce Recipe</strong></h2>
<p>1-1/2 lb Boneless pork shoulder; trimmed of some but not all of its fat; cut into 3/4-inch cubes<br />
Salt<br />
15 Seco del Norte chiles<br />
Boiling water<br />
2 Cloves garlic; coarsely chopped<br />
1 Stick (1/2 inch) cinnamon<br />
1 Bay leaf; preferably Mexican<br />
1 ts (heaped) crumbled dried oregano</p>

<h2><strong>Pork Stew in Red Chile Sauce Preparation</strong></h2>
<p>1. Arrange the pork in one or two layers in a wide, heavy, flameproof casserole. Barely cover with water, and season with salt. Cover and cook over moderate heat until almost tender, about 30 minutes. Drain off most of the broth and reserve, adding enough water to make 2 1/2 cups. Continue to cook the pork uncovered until the fat has been rendered and the meat is slightly browned, about 5 minutes longer.</p>
<p>2. Meanwhile, using a small sharp knife, slit the chiles lengthwise and remove the stems, seeds and veins. Cover with boiling water and set aside to soak for 15 minutes. Drain.</p>
<p>3. Pour 1/3 cup of the reserved pork broth into a blender. Add the garlic, cinnamon, bay leaf and oregano and blend until smooth. Add the mixture to the pork in the casserole and fry for a few seconds.</p>
<p>4. Add 1 more cup of the reserved broth and the drained <strong>red chiles</strong>, a few at a time, to the blender and puree. Strain the red chiles over the pork through a fine-mesh sieve, pressing to extract as much of the flesh and juice as possible. Fry the pork, scraping the bottom of the pan to prevent sticking, for about 5 minutes longer.</p>
<p>5. Add the remaining pork broth to the casserole and cook over low heat until the meat is tender and the <em>red chile sauce</em> is thick enough to coat the back of a wooden spoon, about 1 hour. Season your <strong>pork stew</strong> with salt.</p>
<p>Serve warm. This makes 4 servings of Pork Stew In Red Chile Sauce.</p>
<p>(MAKE AHEAD: The pork stew can be refrigerated for up to 1 day. Rewarm over moderately low heat.)</p>

<p><strong>Recipe Preparation:</strong> cooking &amp; baking</p>
<p><strong>Recipe Serves:</strong> 6</p>
<p><strong>Ingredients for Mexican Flank Steak Recipe</strong></p>
<p>2 1-lb flank steaks</p>
<p>1/2 ts Salt</p>
<p>1/8 ts Garlic salt</p>
<p>1/8 ts Pepper</p>
<p>1 cn (15 oz) tamales in sauce</p>
<p>1 ts Instant beef bouillon granules</p>
<p>1/4 c Hot water</p>
<p>8 oz Tomato sauce</p>
<p>ds Bottled hot pepper sauce</p>
<p>2 tb Cold water</p>
<p>4 ts Cornstarch</p>
<p>Shredded monterey jack cheese</p>
<p><strong>Mexican Flank Steak Preparation</strong></p>
<p>Pound meat on both sides with meat mallet; sprinkle with salt, garlic salt and pepper.</p>
<p>Unwrap tomales; place tamales and sauce in bowl. Break up tamales slightly with fork; spread over steaks.</p>
<p>Roll up each steak jelly roll style, starting with short side; tie or skewer securely. Place in crockery cooker; dissolve bouillon in the hot water; combine with tomato sauce and hot pepper sauce.</p>
<p>Pour over meat. Cover; and continue cooking &amp; baking on low heat setting for 8 to 10 hours. Lift out meat rolls; remove strings or skewers.</p>
<p>Pour cooking liquid into saucepan; skim off excess fat. Blend the cold water into cornstarch; stir into liquid. Cook and stir till thickened and bubbly.</p>
<p>Spoon over meat, sprinkle cheese atop each roll.</p>

<p>Place tortillas, sauce &amp; cheese, alternately, in a casserole dish, ending with cheese. Pour water over cheese.</p>
<p>Bake at 400F for 30 minutes. Serves 6.</p>
