Free Recipe Healthier Pot Roast

Recipe Preparation: boil

Recipe Serves: 8

Ingredients for Healthier Pot Roast Recipe

2 lb Beef bottom round
2 Onions – chopped fine
2 Garlic cloves – minced
1 ts Coriander seed
1-1/2 ts Ground cumin
10 oz Tomato paste
4 oz Green chilli peppers – chopped
Black pepper – to taste

Healthier Pot Roast Preparation

1. Trim meat of all external fat. Use a deep, heavy pot with lid. Brown meat on all sides. You should not need any added fat to brown adequately.

2. Add onion and garlic; cook until the onion is soft, about 3-4 minutes, stirring occasionally. Stir in coriander, cumin, tomato paste, 3/4 cup water, chilies and black pepper.

Bring to a boil. Reduce heat, cover, and simmer for 2-1/2 to 3 hours or until meat is tender.

* For freezing, slice into thin slices and freeze in individual portions. Cover with some of the sauce before freezing. Thaw and reheat slowly.

Recipe Preparation: cooking & baking

Recipe Serves: 6

Ingredients for Indian Pot Roast Recipe

1 4 lb. pot roast
2 Cloves garlic
Flour
12 Whole peppercorns
1 Bay leaf
1/2 c Good rum, or dry red wine
4 tb Butter
Salt
1 lg Onion, sliced
12 Whole allspice
1 tb Grated horseradish
1/2 c Water
1 Recipe your dumplings
Small whole carrots OR>>>
Large carrots, quartered

Indian Pot Roast Preparation

Use this recipe for either regular meat or venison. Mash garlic and saute in butter.

Salt meat and flour. Brown well on all sides in butter. Lay meat on bed of this sliced onion in lge. Dutch oven.

Add the butter, spices and seasonings. Pour rum or wine over meat.

A good pot roast will supply most of its own juices, but pour the water over to make an ample supply of gravy. Cover tightly and simmer 3-4 hrs, either in oven or on the stove top.

If carrots are wanted, add during last 1/2 hr. of cooking. Add dumplings last 12 minutes.

When roast is done, remove to a hot round platter and surround with dumplings and carrots. Stir gravy until smooth. Pour over roast.

If fresh dill is available, cut it over dish with lavish hand.

Today I want to continue the theme of roast meat, with a delicious recipe for marinated pot roast. The previous few posts I have been talking about how Summer is coming in the southern hemisphere, but I don’t want to forget about my northern hemisphere friends. A great roast dinner is fantastic in colder weather, and this one will definitely warm you up, so give it a go and impress your family and friends!

Recipe Serves: 8

Ingredients for Marinated Pot Roast Recipe

3-1/2 lb Top, eye or bottom round-beef

Marinade:

1 c Red wine

1/4 c Vegetable oil

2 tb Worcestershire or soy sauce

1 Onion, finely chopped

1 Clove garlic, finely chopped

2 Carrots, finely chopped

2 Stalks celery, finely chopped

3 Sprigs parsley

1/2 ts Thyme

1 Bay leaf

1 ts Peppercorns

Marinated Pot Roast Preparation

The meat will be so tender you can cut it with a fork. Soak the clay pot in cold water for 10 minutes. Tie the beef with string in four places so that it will retain its shape as it cooks.

Combine all the marinade ingredients in the clay pot. Marinate the beef for at least 24 hours, turning the beef several times.

Add sufficient water or beef broth to the marinade to cover 3/4 of the height of the beef. Place the pot in a cold oven.

Adjust the heat to 450 degrees F. Bake for 1 1/2 hours. Serve with horseradish. Enjoy!
