<h3><strong>Ingredients for Garlicky Beef Fajitas Recipe</strong></h3>
<p>6 oz Lean flank steak<br />
1 ts Olive oil<br />
1/2 c Onion, (1 small) halved lengthwise and thinly sliced<br />
2 c Sliced fresh mushrooms<br />
1/2 c Red bell pepper strips<br />
3 Cloves garlic, minced<br />
1/2 ts Ground cumin<br />
1/8 ts Crushed red pepper<br />
8-3/4 oz Whole kernel corn, (1 can) drained<br />
1-1/2 tb Fresh lime juice<br />
2 Flour tortillas, (8-inch)<br />
2 tb Non-fat sour cream alternative</p>
<h3><strong>Garlicky Beef Fajitas Preparation</strong></h3>
<p>Trim fat from steak. Slice steak diagonally across grain into thin strips, and set aside.</p>
<p>Heat oil in a large nonstick skillet over medium-high heat.</p>
<p>Add onion and next 3 ingredients; saute 4 minutes or until tender. Remove vegetables from skillet; set aside.</p>
<p>Add steak to skillet; saute 3 minutes or until done. Return vegetables to skillet.</p>
<p>Add cumin and next 2 ingredients; saute 2 minutes or until thoroughly heated. Remove from heat; stir in lime juice.</p>
<p>Divide mixture evenly between the tortillas; top each with 1 tablespoon sour cream.</p>
<p>Yield: 2 servings.</p>
<p>Per serving: 440 Calories; 15g Fat (30% calories from fat); 26g Protein; 54g Carbohydrate; 44mg Cholesterol; 386mg Sodium</p>

<p>6 lg Cabbage leaves<br />
2 c Boiled ham; diced<br />
1-1/2 c Cooked rice<br />
1 med Onion; chopped<br />
1 Egg; beaten<br />
1 tb Parsley flakes<br />
2 cn Tomato soup<br />
Salt &amp; pepper to taste</p>
<h3>Ham Stuffed Cabbage Rolls Preparation</h3>
<p>Cook cabbage leaves in boiling, salted water until wilted; drain.</p>
<p>Combine ham, rice, parsley, onion, egg and 3/4 cup tomato soup.</p>
<p>Place about 1/2 cup of ham-rice mixture on each cabbage leaf; roll and secure with toothpicks or string.</p>
<p>Place cabbage rolls in casserole; pour remaining soup over cabbage; season to taste. Cover.</p>

<p>1-1/2 lb Boneless tender beef 1 inch thick<br />
2 lg Bell peppers<br />
2/3 c Teriyaki baste &amp; glaze<br />
1 ts Onion powder<br />
1/2 ts Ginger<br />
1/2 ts Chili powder<br />
1/4 ts Hot pepper sauce<br />
8 10 metal skewers</p>
<h3>Grilled Shish Kabobs Preparation</h3>
<p>Cut beef into 1 cubes &amp; each bell pepper into 16 pieces.</p>
<p>Combine teriyaki, onion powder, ginger, chili powder &amp; pepper sauce; remove 1/3 cup mix &amp; pour over beef &amp; peppers in bowl, tossing to coat.</p>
<p>Thread beef and peppers alternately on skewers, leaving space between pieces.</p>
<p>Cook skewers on grill 5 inches from hot coals 4 minutes on each side (for rare), or to desired doneness, brushing occasionally with remaining sauce mix.</p>

<p>4 sl (rectangular) boiled ham (1/4-inch thick)<br />

10 oz Frozen broccoli spears, cooked and drained<br />

<h3>Ham-Broccoli Rolls Preparation</h3>
<p>1. In a shallow, heat-resistant, non-metallic baking dish, place ham slices. Top each ham slice with cheese.</p>
<p>2. Place cooked broccoli spears on top of each cheese-topped-ham slice. Set aside.</p>
<p>3. In a medium-sized, heat-resistant, non-metallic bowl, melt the one tablespoon butter, uncovered, in Microwave Oven 30 seconds.</p>
<p>4. Blend in the flour, salt, horseradish, mustard, Worcestershire sauce and onion. Set aside.</p>
<p>5. Combine beaten egg yolk and pineapple juice.</p>
<p>6. Add pineapple juice mixture to butter mixture. Blend well.</p>
<p>7. Stir in milk.</p>
<p>8. Heat, uncovered, in Microwave Oven 5 minutes, stirring every minute until sauce is thick and bubbling.</p>
<p>9. Spoon about 1 tablespoon of sauce over broccoli.</p>
<p>10. Roll ham and cheese around broccoli and secure with wooden toothpicks.</p>
<p>11. Heat, covered, in Microwave Oven for 8 minutes.</p>
<p>12. Spoon remaining sauce over ham rolls. Top with pineapple slices.</p>
<p>13. Heat, uncovered, in Microwave Oven 2 to 3 minutes or until sauce is bubbly.</p>

<p>1 sl 33%-less-sodium cooked ham, (1-pound) (1/2 inch thick)<br />
2 ts Brown sugar<br />
1/8 ts Ground ginger<br />
1 tb Lemon juice<br />
1 ts Dijon mustard<br />
1/2 c Unsweetened pineapple juice<br />
1 ts Cornstarch</p>
<h3>Ham Steak with Pineapple Sauce Preparation</h3>
<p>Trim fat from ham. Lightly score ham slice in a diamond pattern using a sharp knife. Place in an 11- x 7- x 2-inch baking dish.</p>
<p>Combine next 4 ingredients in a bowl, stirring well with a wire whisk; spread mixture over ham.</p>
<p>Cover with heavy-duty plastic wrap, and vent.</p>
<p>Microwave at HIGH 4 minutes or until thoroughly heated. Remove ham slice from dish, and cut into 4 equal pieces; set aside, and keep warm.</p>
<p>Combine pineapple juice and cornstarch in a 1-cup glass measure, and stir well.</p>
<p>Microwave at HIGH 1-1/2 minutes or until thickened and bubbly; stir well.</p>
<p>Yield: 4 servings (serving size: 3 ounces ham and 2 tablespoons sauce).</p>
<p>Per serving: 92 Calories; 4g Fat (37% calories from fat); 6g Protein; 8g Carbohydrate; 20mg Cholesterol; 478mg Sodium</p>
<p>Serving Ideas : Serve pineapple sauce with ham.</p>
<p>NOTES : Serve sweet potato wedges, steamed zucchini, and corn muffins to complement this pineapple-flavored sauce.</p>

<p>1-1/2 lb Cooked ham; ground<br />
1 lb Ground pork<br />
1 cn Pineapple Chunks (13 1/4 Oz) drained, Reserve Syrup<br />
1 c Soft Bread Crumbs<br />
2 Whole eggs; beaten<br />
1/3 c Finely chopped onion<br />
1 tb Snipped parsley<br />
1/4 c Brown sugar<br />
2 tb Lemon juice<br />
1 tb Prepared mustard</p>
<h3>Ham- Pineapple Loaf Preparation</h3>
<p>Mix well ground ham, ground pork, Y2 cup reserved pineapple syrup, bread crumbs, eggs, onion and parsley.</p>
<p>Press into a 9 x 5 loaf dish. Top with the pineapple chunks.</p>
<p>Press the chunks lightly into the loaf.</p>
<p>Mix brown sugar, lemon juice, mustard and 1 tablespoon reserved pineapple syrup. Brush over the loaf.</p>
<p>Microwave at medium high (70%) 18 to 20 minutes, brushing once or twice with glaze. Let stand 5 minutes.</p>
<p>Makes 6 servings.</p>

<h3>Ingredients for Inside-Out Stuffed Peppers Recipe</h3>
<p>1 lb Ground beef<br />
1/2 c Choped onion<br />
1 cn Stewed tomatoes, cut up 16-ounces<br />
1 lg Green pepper, choped<br />
1/2 c Uncooked long grain rice<br />
1/2 c Water<br />
2 ts Worcestershire sauce<br />
1/2 ts Salt<br />
1/4 ts Pepper<br />
1 c Shredded cheddar cheese</p>
<h3>Inside-Out Stuffed Peppers Preparation</h3>
<p>In a skillet, brown beef, drain. Transfer to a greased 2-qt casserole.</p>
<p>Add the next 8-ingredients.</p>
<p>Cover and begin cooking and baking at 350F for 1 hour or until rice is tender.</p>

<p>Place the potatoes, green capsicum, onion, and garlic in a non-stick frying pan with 1/2 cup of the water.</p>
<p>Cook, stirring, over medium heat for 5 minutes. Add the remaining 1/2 cup water.</p>
<p>Cover and continue to cook for another 10 minutes, stirring occasionally. Add the corn and tomato. Cook, stirring, for an additional 5 minutes.</p>
